Heavenly and Healthy PB & Banana French Toast



This recipe is a playful take on traditional French toast, with a few quirky twists to keep things interesting. The base of the recipe is made with whole wheat bread for added fiber and nutrients, and the custard mixture is sweetened with natural honey and spiced with cinnamon for a cozy and comforting flavor. But what really sets this French toast apart is the toppings!


Ingredients:

  • 4 slices of whole wheat bread

  • 2 large eggs

  • 1/4 cup unsweetened almond milk

  • 1 tbsp honey

  • 1/2 tsp cinnamon

  • 1 banana, sliced

  • 2 tbsp peanut butter

  • 2 tbsp mini chocolate chips

  • Coconut oil or cooking spray for cooking

Directions:

  1. In a shallow bowl, whisk together the eggs, almond milk, honey, and cinnamon until well combined.

  2. Heat a non-stick skillet over medium heat and coat with a small amount of coconut oil or cooking spray.

  3. Dip each slice of bread in the egg mixture, making sure to fully coat each side.

  4. Place the bread in the skillet and cook until golden brown on both sides, about 2-3 minutes per side.

  5. Once all the bread is cooked, it's time to add the toppings! Spread each slice of French toast with a generous amount of peanut butter and top with sliced banana and mini chocolate chips.
