Here's a recipe for a healthy and comforting high-protein lunch that you can make today:


Chicken Parmesan Meatballs

Ingredients:

  • 1 pound ground chicken breast

  • 1/4 cup grated parmesan cheese

  • 1/4 cup breadcrumbs

  • 1 egg

  • 1 clove of garlic, minced

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 cup marinara sauce

  • 1/4 cup mozzarella cheese

  • Fresh basil for garnish

Directions:

  1. Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.

  2. In a large bowl, mix together ground chicken, parmesan cheese, breadcrumbs, egg, garlic, salt, and pepper.

  3. Form the mixture into small meatballs.

  4. Place the meatballs on the prepared baking sheet and bake for 20-25 minutes, or until they are cooked through and golden brown.

  5. Remove the meatballs from the oven, and spoon marinara sauce over the top of each one.

  6. Sprinkle mozzarella cheese over the meatballs, and return them to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

  7. Garnish with fresh basil and serve with your favorite pasta or a side salad.
